inconsistent loading of SSIs?

We have two domains hosted here:
bigburrito.com
madmex.com

On the first, server side includes work just fine. On the second, not at all. Our main IT guy is too busy to address this at the moment; can anyone point me towards a solution?

That was due to a misconfiguration on files located under /var/www/ (but not /var/www/html/). It should be fixed at this time.
